Birthday is a unique day in every family, it is a good day to be happy with friends and family members. Of all the events of the year, this year’s birthday celebrations was uniquely memorable to me since it was my son’s birthday. It was then agreed that we should home make the chocolate cake which has not only the advantage of being homemade but also results in the baking of the cake making the house warm and aromatic. 

The Birthday Preparations 

As a mother of a boy, my son’s birthday was a moment I looked forward to with so much joy the morning came with great expectations. The whole day was thought of down to the cards on the tables and games that were going to be played but the surprise was the homemade chocolate cake. It had been a week that my son, Aanas , had been talking about a cake and so I had to make everything right to make sure I gave him what he wanted. 

As for me, the previous day was devoted to purchasing the choicest produce for the day’s meals. As I roamed around the supermarket I made my choices of good cocoa powder, quality dark chocolate as well as the best butter. These choices were important since the ingredients determine the qualities of the cake that is to be produced. 

The Recipe: A SPECIAL CHOCOLATE CAKE FOR THE MEMORY 

Here is the one I used for Aanas’s birthday cake. It would be a moist, rich, perfect for a special occasion chocolate cake that would match the standard of all the other classic cake recipes. 

Ingredients:

  •  – All-purpose flour 1 3/4 cups 
  • – White sugar add 1 1/2 cups to this. 
  • – 3/4 cup unsweetened cocoa powder 
  • – 1 1/2 teaspoon baking powder
  •  – 1 tablespoons baking powder 
  • – 1 teaspoon salt 
  •  2 large eggs 
  • – A cup of whole milk 
  • – They include: 1/2 cup vegetable oil, 1/2 measure cup of baking soda, 1/2 measure cup of molasses. 
  • – One tablespoon is equivalent to three teaspoons; 2 teaspoons vanilla extract 
  • – A pinch of salt & pepper and 1 cup boiling water 

Instructions: 

  1. *Preheat the Oven*: To begin with let the oven warm up to 350 F or 175C. Preheat oven at 350°F Grease and flour two 9-inch round cake pans. 
  2. *Mix Dry Ingredients*: To a big bowl, combine the flour, sugar, cocoa, baking powder, baking soda, and salt in a bowl. 
  3. *Combine Wet Ingredients*: To a similar bowl, mix the eggs to the soft peak stage. Stir in the milk, vegetable oil, and vanilla extract and blend well. 
  4. *Combine and Mix*: Sometimes, pour the wet mixture to the dry mixture ensuring you mix gently to avoid creation of winds. The batter will be quite thick and will be used to bread meats and other food items before deep frying. 
  5. *Add Boiling Water*: Stir in the boiling water gently and quickly. The batter will be thin, and again this is why the cake is so moist. 
  6. *Bake*: Pour equal amounts of the batter into each of the prepared pans. Place into the preheated oven and bake for 30-35 minutes or until a toothpick inserted in the middle of the cake comes out clean. 
  7. *Cool and Frost*: It is advised that the cakes should cool in the pans for about 10 minutes and then should be elevated on a wire rack so that they cool completely before they are frosted. 

Frosting the Cake: The Finishing Line 

The frosting was a basic chocolate buttercream although the cake could have been moist. I used the following ingredients:I used the following ingredients:

  •  – melted: 2 sticks (one cup) unsalted butter
  •  – 3 1/2 cups confectioners sugar 
  • – 1/2 cup of unsweetened cocoa powder
  •  – 1/4 cup milk 
  • – 1 teaspoon, vanilla extract 

Instructions: 

  1. *Cream the Butter*: I then beat the butter until it was creamy using the medium speed. 
  2. *Add Dry Ingredients*: Then carefully incorporate the sifted powdered sugar and the sifted cocoa powder in the mixture, on low speed.
  3. *Add Milk and Vanilla*: Finally pour the milk, and the vanilla extract and beat on high speed until the frosting is light and fluffy. 
  4. *Frost the Cake*: When it is cooled to the room temperature, frost the frosting on one of the layers of the cake and placed the second layer on top of it and frost the sides and the top of the cake. 

Tips for Baking Success 

  1. *Measure Ingredients Accurately*: As with many meals, baking is a science and that means that the measurements must be as accurate as possible. Always measure your flour and sugar using the dry measuring cups and your milk and oil using the liquid measuring cups. 
  2.  *Use Room Temperature Ingredients*: Eggs, butter and milk should be brought to room temperature as this will help in the battering process as well as help to keep the consistency smooth. 
  3. *Sift Dry Ingredients*: A process of sifting the flour and cocoa powder knock off the lumps and ensures even distribution of the powder batters hence leading to a light yummy cake. 
  4. *Don’t Overmix*: As soon as you incorporate the wet ingredients to the dry, mix until they’re just blended together. If too much is added the cake will be overmixed and the end product will be a dense cake. 
  5. *Check for Doneness*: When baking, the time difference can be a few minutes so begin checking the cake some time before the recommended time. Check whether or not the cake is ready by inserting a toothpick in the centre of the cake; if it comes out dry, the cake is done.
  6. *Cool Completely*: Always ensure that the cakes have cooled before was written so that they can effectively support the frosting. Frosting can tend to slide off the warm cake because the frosting will melt. 
  7. *Use a Cake Leveler*: If the cakes have risen more on top then at the bottom, Flatten these over with a cake leveler or a sharp knife. This goes to help in making a clean and professional look being given to the project. 

The Moment of Truth 

When I took the cake out of the oven to cool, Aanas’s anxiety was practically visible. He had been looking forward to this moment and I could not help but smile to see him chuffed when placing the cake before him. It smelled very rich and had a wonderful chocolate like scent and the first cut through the cake showed a well moistened crumb. 

We sat around the table and expressed our regards singing the customary ‘Happy Birthday’ to Aanas, after which he blew his candles and offered his wish before cutting the cake. It was as I imagined: rich, very moist and most importantly flavorful, with a sweet aroma that penetrated the chocolate cake. The content on Aanas’s face and the sparkle in his eyes were worth all the effort that was put into the dancing. 

Conclusion 

Birthday cakes prepared from the scratch are something which makes me proud especially if it will be for a loved one. Staging the actual preparation of the cake through the process of mixing the ingredients, baking, as well as decorating, turns into a treasurable memory.
